Micro-climate Conditions: The area is located on the Southern highland region and the micro-climate is characterized by sunny well aired & steady low/average temperatures during all seasons of the year, compared to the eastern, northern and western side regions. The land has rich soil and is covered by small stones which are essential for keeping water in the root system any day of the year.
Special Characteristic:The above mentioned micro-climate conditions are responsible for the uniquely rich and complex flavor & aromas and is the main factor accounting for the presence of highly bio-active bio-phenols.
Cultivation Practices: Trees are rain fed, supported by organic means and rarely affected by destructive insects and olive fruit enemies such as fungal infections which might be appear in high moisture lowland areas.
Biodiversity Profile:The estates’ grounds are covered by small rocks, edible greens, wild weeds, wild flowers and low grass.
Irrigation:The Northern Estates are non-irrigated olive groves. They are watered naturally by rain.
