Working hard for decades on improving cultivation, organic fertilizing and milling practices , in order to produce a  bioactive & nutritional EVOO with important  health protection properties

After long-term systematic work on the above-mentioned fields we have managed to produce functional olive goods. Today we are  proud to be  part of academic studies on bioactive & Nutrient Properties which are conducted by the Department of Biochemistry and Biotechnology Of the University Of Thessaly. The studies have included both edible olives & olive oil of the Amfissis variety & the indigenous Olea Sylvestris for 4 consecutive years. During the study periods the products of our family have been rated with the highest scores for olive oil and olives’ Antioxidant & Nutrient Properties.

The excellent flavor of our EVOO aside, our products were also found to have extraordinary nutritional and antioxidant properties, trace elements and  unsaturated hydrocarbons (such as hudroxytyrosol, Tyrosol, oleuropein and squalene) that enchase physical health & well-being, preventing oxidation stress and  the development of diseases such as cardiac and vascular diseases, neurodegenerative, cytotoxic, metabolic , inflammatory diseases and others.

EVOO contains  all the important for human health nutrients, including vitamin K, and trace amounts of potassium. Our products are also rich in vitamin E, a fat-soluble vitamin that plays a role in immunity and disease prevention. Olive oil & Olives Bioctivity have been thoroughly examined during  a 4 years project in order to determine the antioxidant levels which contribute to human health and well-being. AFQ System (Activity Foodoxys Quality) evaluates the free-radical scavenging capacity against synthetic and naturally occurring free radicals, the reducing properties against metal ions, and the ability to protect important endogenous biomolecules, such as DNA and lipids, from severe oxidative damage. The oxidative modifications to endogenous biomolecules have been associated with various pathological conditions, such as cardiovascular diseases, neurological disorders, and cancer.

The produced olive goods appears significant differences regarding their organoleptic profile  reflecting  soil, microclimate and biodiversity differentation.

Princeps EVOO comes from the mountainous areas or slopey sea side hills rich in beekeeping plants , herbs and bushes  where the annual average temperature is higher .Nobilis EVOO comes mainly from the low temperature areas of the  lowlands which  are surrounded by rich vegetation  and streams.

The above mantioned  particularity in the microclimate as well as the different varieties of wild olive trees allow us to create differentiated batches of olive goods with distinct and unique characteristics assisted by the scientific research and  technology.

Nobilis is produced from Amfissis Olive Fruit in the Pteleos lowlands. The olive fruit is collected in late October by hand when the color turns from green to red and is pressed on the same day in a two-phase olive mill

Nobilis evoo is produced also from the rain-fed olive trees of Amfisis Cultivar  in Pteleos, rich  in germination lowlands where the temperature throughout the year is lower than the regional average.

Production & Storage Safety

We apply production and storage processes, which ensure the useful life of olive oil, both in terms of chemical composition, mainly related to health compounds, and in sensory quality. Great efforts are made in the agronomic field to optimize the production and storage conditions of a food which, as a whole, has demonstrated so many benefits on health.

Milling Process 

Oil extraction takes place in 2 different olive mills utilizing different technologies to produce the different categories of olive oil. Voliotis Family with  ALFA LAVAL Technology &  M.SIAMANIKOS with AMENDUNI Technology are both  olive mills applying environmentally-friendly and  ground-breaking ideas in new technologies, following international standards, techniques and rules of organic extra virgin olive oil production. It is cold press. During the malaxation stage the temperature does not exceed 25 degrees Celsius. Τhe packaging takes place in the Voliotis Family facilities in Ano Lehonia with EL 40 462

Transportation & Storage

After pressing, the fresh EVOO is transferred directly to our stoned home warehouse in our own inox tanks of 100 lt and placed in separate inox tanks that have been carefully cleaned with  biodegradable materials that do not leave behind fragrances and harmful substances. At all stages of production the extra virgin olive oil does not come in contact with any kind of plastic storage device.

Preservation

The Extra Virgin Olive Oil is kept in the stone-built home warehouse where the temperature does not exceed 20 degrees Celsius. Right after the olive oil will be transferred into biophotonic bottles in order to be delivered to customers as soon as possible. The Early Harvest EVOO’s lifetime is 8 months from the milling date. The classic EVOO life time is 12 months from milling date. Τhe packaging takes place in the Voliotis Family facilities in Ano Lehonia Volos, EL 40 462
